Butchers

Traditional butcher shops are numerous in Northern Ireland, and many butchers work closely with local farmers, if not their own family farms, buying whole carcasses and dry-aging the meat themselves. An increasing number now also set themselves apart with excellent game – like Coffeys, in Belfast. Others make excellent local specialties including tasty sausages, puddings, pies, pasties, dry-cure bacon, and hams. National award-winners such as the O’Kane brothers in Claudy are numerous, but champion butcher McCartney’s of Moira is famous for its sizzling sausages, and O’Doherty’s, Enniskillen is celebrated for its sweet, natural cure Fermanagh Black Bacon.
