After 25 years in food production I saw an opportunity to produce traditional black and white puddings as there were no widely available hand crafted puddings in Northern Ireland.
My puddings are ‘old style’ using simple ingredients that would have been used many years ago. No additives or preservatives are used. The recognisable ingredients are oatmeal, fresh onions, beef suet, water, salt and pepper, for the white pudding. These are the same for the black pudding with the addition of dried blood powder. Fresh onions are used for the puddings. These are more expensive and time consuming and eye watering (peeling piles of them) but they add so much more taste than the dried onions which are re-hydrated and commonly used in pudding production today. Our puddings are available to buy in local butchers, independent supermarkets and through Glentender.

The television cookery show ‘The Great Food Adventure’ filmed me making black puddings at my premises. The programme was hosted by Jenny Bristow and Barry McGuigan. Jenny Bristow cooked a warm potato salad and incorporated my black and white puddings into the dish. The recipe can be found on Jenny Bristow’s website. The programme is due to be shown in September 2010.
